Ramadan Iftar Menu: Day 13

White Oats Soup + Shish Tawook Chicken + Fried Bananas with Ice-cream


The Soup:

White Oats Soup


What You'll Need:

3 cups of chicken broth

1 cup of white oats

1 small onion (finely chopped)

1 Tsp of butter

Salt and pepper

Steps:

1. In a small saucepan, melt the butter and fry the chopped onion.

2. Pour the chicken broth into a cooking pot, and leave on medium heat. Add the onion and bring the mixture to a boil.

3. Now it's time to add the white oats, salt and pepper. Make sure to stir well, then leave it for 20 minutes to cook while the pot is on low heat.

4. Your soup should be ready by now, serve it hot with a squeeze of lemon juice.


Main Dish:

Shish Tawook Chicken Recipe


What you'll need:

1 kilo skinless boneless chicken breasts (cut into small chunks)

1/2 cup of lemon juice

1/2 Tsp of onion powder

1/2 Tsp of garlic powder

1/2 Tsp of black pepper

1/2 Tsp of salt

1/2 Tsp of curry

1/2 Tsp of paprika

1/2 Tsp of ground coriander

1/2 Tsp of turmeric

1 Tbsp of ground thyme

2 Tbsp of ketchup

2 Tbsp of olive oil

6 Tbsp of yogurt

Bamboo skewers

Steps:

1. In a bowl, mix all the spices, along with the lemon juice, olive oil and yogurt.

2. Add the chicken chunks to the bowl, and make sure to rub it well and soak it in the marinade.

3. Cover the bowl and leave the chicken to marinate for a minimum of six hours in the fridge. For best results, you can leave it overnight.

4. Prepare the grill on medium heat, and add the chicken chunks to the skewers.

5. Leave the chicken to be grilled for about 5-10 minutes on each side.

6. Serve with Lebanese pita bread, pickled cucumbers and thomeya dip.


Dessert:

Fried Bananas with Ice-cream Recipe


What you'll need:

5 bananas

1 egg

1/4 cup of coconut milk

3/4 cup of flour

2 Tbsp of sugar

1/4 Tsp of cinnamon

Oil (for frying)

Vanilla ice-cream (for serving)

Steps:

1. Peel the bananas, and slice them, and set aside.

2. In a bowl, beat the egg, mix the flour, sugar, cinnamon, and coconut milk.

3. Roll the bananas in the batter until it's well coated.

4. In a sauce pan, preheat the oil and fry the bananas until it becomes golden.

5. Drain the bananas from the oil on tissue paper.

6. Serve bananas on a plate, topped with vanilla ice-cream. You can also drizzle some caramel sauce or honey.
