Ramadan Iftar Menu: Day 25

Meatball Soup + Fattet Makdous + Strawberry Oatmeal Smoothie


The Soup:

Meatball Soup Recipe


What you will need:

1/4 kilo of minced meat

1 onion (chopped)

1 Tbsp parsley (chopped)

1 Tbsp coriander (chopped)

Salt and pepper

4 cups of meat broth

1/4 cup of rice

1 bay leaf

1 cup of frying oil

Steps:

1. Mix the minced meat with the parsley, coriander, onions, salt and pepper.

2. Take small portions of the mixture and shape them into balls using your hands. Fry them in a pan then set aside for now.

3. Get a cooking bowl and put the meat broth and bay leaf in it. Leave to boil.

4. When it starts to boil, add in the rice and leave the bowl on the stove for 30 minutes while covered.

5. Add the meat balls to the soup. Keep it on medium heat for 10 minutes.

6. Remove the bay leaf from the soup and serve.


Main Dish:

Fattet Makdous Recipe


What you will need:

1 kilo of eggplants

1/4 kilo of minced meat

6-8 yogurt cups

2 cups of tomato juice

2 Lebanese pita bread (cut to pieces)

3 Tbsp of tahini

3 Tbsp of pomegranate molasses

2 cloves of garlic (minced)

Salt and pepper

2 Tbsp of lemon juice

1/4 cup of roasted pine nuts

Steps:

1. After peeling the eggplants, cut them into cubes and sprinkle them with a pinch of salt. Set aside for about 15 minutes. This step prevents the eggplants from absorbing too much oil while frying.

2. Get a frying pan, heat the oil, then put in the eggplants. Don't forget to flip them every once in a while until they take a golden color.

3. Remove the eggplants from the pan and set them on kitchen paper towel to drain any excess oil.

4. In another frying pan, put the minced meat, eggplants, salt and pepper and mix well.

5. Pour the tomato juice over the mixture and lower the heat. Leave until it starts to boil.

6. Now it's time to fry the bread pieces in some oil, then layer it in the serving plate. Make another layer over it from the meat mixture.

7. In a suitable bowl, mix the yogurt, tahini, lemon squeeze, and a pinch of salt. This will be the next layer on your serving plate.

8. Garnish your makdous with parsley and roasted pine nuts then serve.
