Ramadan Iftar Menu: Day 7

Chicken and Corn Soup + Oven-baked White Rice + Chocolate Pudding


The Soup:

Chicken and Corn Soup Recipe


What you will need:

1 cup cooked chicken cubes

1 can sweet corn

4 cups chicken broth

1 Tbsp corn starch

Salt and pepper

Steps:

1. Put the chicken broth in a pot and leave it on medium heat till it starts to boil.

2. Add the chicken cubes and corn to the pot.

3. Fill 1/4 of a cup with water and dissolve the corn starch in it, then gradually add it to the broth while stirring continuously.

4. Leave on the stove for 7 minutes. Now it's ready to be served.


Main Dish:

Oven-baked White Rice Recipe


What you will need:

2 cups of rice

2 Tbsp butter

125 grams heavy cream

1 1/2 cups of milk

Salt and pepper

Steps:

1. Pre-heat the oven on medium temperature.

2. Wash the rice well then put it in a pot after spreading 1 tablespoon of butter over the surface.

3. Mix the milk, salt, pepper and the remaining amount of butter in a bowl. After it's fully dissolved, pour it over the rice.

4. Spread the heavy cream over the rice and put in the oven for 1 hour, or till you notice the surface turns a golden brown color.

Dessert:

Chocolate Pudding Recipe


What you will need:

1/2 cup of sugar

1/4 cup of starch

2 Tbsp of unsweetened coco powder

1/4 tsp of cinnamon powder

3 1/4 cups of milk

1 tsp of vanilla

200 grams of raw chocolate

6 Tbsp of mixed nuts (crushed or ground)

Whipped cream

Steps:

1. Bring a large cooking bowl and add in the sugar, starch, coco powder, cinnamon, vanilla and milk. Blend them well with a whisk, you will notice that the starch has completely dissolved.

2. Turn on the heat over the bowl on a low temperature and stir until it starts to boil.

3. Continue stirring with a regular spoon for 15 to 20 minutes. The mixture will become thick and soft.

4. Add the raw chocolate and keep stirring till it fully melts.

5. Pour your chocolate pudding mixture in dessert serving bowls then leave in the fridge for a few hours. It will thicken and jelly-like.

6. Before you serve your delicious chocolate pudding, spread a layer of whipped cream on top and then sprinkle some crushed nuts.
