Ramadan Iftar Menu: Day 12

Pasta & Vegetables Soup + Beef-Stuffed Potatoes + Strawberry Cheesecake Cups


The Soup:

Pasta & Vegetable Soup


What you will need:

300 grams of pasta

2 Tbsp of olive oil

3 chicken breasts (sliced)

1 large onion

2 cups of mixed vegetables (potatoes, carrots, etc..)

Salt & Pepper

1 cube of chicken stock

4 cups of hot water

Chopped parsley for garnish

Steps:

1. Start by cooking the pasta and leave it aside for now. 

2. Get a medium sized cooking bowl, and add the oil and onions to it. Start frying them until the onion starts to turn yellow, then add the slices of chicken breasts.

3. Add a pinch of salt and pepper, and continue to stir for a few minutes, then add a cup of hot water to the half cooked components. 

4. Once the water starts to boil, add the cooked pasta and cube of chicken stock, then add the rest of the hot water. Leave the soup on the stove until it starts to boil again. 

5. Place the soup in a serving bowl, and decorate it with the parsley. 


Main Dish

Beef-Stuffed Potatoes


What you will need:

2 Kilos of small potatoes

1/2 kilo of minced beef

1 large onion (chopped)

1 green pepper (chopped)

1 tomato (chopped)

2 Tbsp of cooking oil

2 Tbsp of butter

Salt & Pepper

2 cups of chicken broth

Steps:

1. Start by cooking the minced beef to prepare it before the stuffing. In another cooking bowl, add the oil, green pepper and onion then stir for a few minutes until the color turns yellowish. 

2. Add the tomatoes, beef, salt and pepper and leave them on the stove while stirring regularly until cooked. 

3. Start peeling the potatoes, and scoop out the center. Just make sure not to throw away the extracted potatoes, as you will use it later. 

4. In another frying pan, heat the butter, add the potatoes and fry them. Make sure to fry the potatoes on each side, until it turns reddish. Once done, remove it from the pan and place it on tissue paper to drain the oil. 

5. Use the potato remains to cover the surface of the serving tray. This will prevent the potatoes from sticking. 

6. Now it is time to stuff the center of the potatoes with the minced beef and line up the potatoes in the serving tray.

7. Pour the chicken broth around the potatoes, then place it in the oven for about 15-20 minutes, until all potatoes are fully cooked and the surface has turned red. Serve it with white rice. 


Dessert

Strawberry Cheesecake Cups


What you will need:

1 pack of plain biscuits

2 Tbsp of butter

1 cup of milk

2 packets of whipped cream

6 spoons of strawberry sauce

1/4 kilo of cream cheese

Steps:

1. Start by crushing the packet of biscuits in a bowl until it looks like bread crumbs. In a small sauce pan melt the butter and then pour it over the crushed biscuits, and mix them together thoroughly. 

2. In another bowl, add the milk, whipped cream and cheese. Mix with an electric mixer for five minutes.

3. Next get a set of cups of same size. In each cup, add two spoons of biscuits, be sure to press it down with your hand so it can stick together. Add the cream cheese on top of it. 

4. Place the cups in the fridge for around three hours. After that, decorate the cream with the strawberry sauce and serve.
