Ramadan Iftar Menu: Day 10

Chicken and Potato Chowder Soup + Potato Gratin Recipe + Chocolate Fondant


Soup:

Chicken and Potato Chowder Soup

What you will need:

1/4 cup of butter

2 large potatoes

1 large onion

Salt and pepper

3 cups of chicken broth 

2 cups of milk

1/4 cup of flour

2 stalks of celery

2 cups of diced chicken breasts

1 1/2 cup of cheddar cheese

Steps

1. Start by peeling the potatoes and dicing them up into cubes. Also be sure to slice the onions and celery. 

2. In a saucepan, melt the butter. Then add the onions and celery, and stir for a few minutes. 

3. Lower the heat and leave the onions and celery to simmer for about 10 minutes. 

4. Add the flour to the sauce pan, and stir until flour turns brown. Once it turned brown, add the chicken broth and milk and stir very well, until soup becomes creamy.

5. Once the mixture has thickened, add the potatoes and mix. 

6. Once the mixture begins to boil, reduce the heat, and add the chicken and the cheese. Stir the soup for a few minutes, then add a pinch of salt and pepper.

7. Cover the soup for around 5-7 minutes. Once potatoes feel tender, your soup is ready.

Dessert

Chocolate Fondant

What you will need:

100 grams of dark chocolate

 2 Tbsp of cocoa

100 grams of butter

2 eggs

1/3 cup of granulated sugar

1/2 Tbsp of baking powder

1 Tbsp of flour

**Preheat the oven to 200 degrees.

Steps:

1. You will need two saucepans, one large and one medium sized. Fill the large sauce pan half way with water, and place the small sauce pan inside it.

2. In the small sauce pan, add the chocolate and leave it to melt. 

3. Once the chocolate has melted, remove it from the larger sauce pan and heat. Add the butter to it and stir very well. 

4. In another bowl, mix the eggs and sugar together using an electric blender. Once the mixture has formed many bubbles and turned fluffy, add it to the saucepan with chocolate.

5. Next add the flour, cocoa, and baking powder to the sauce pan and mix until the mixture is smooth and creamy. 

6. You will need a cupcake tray or ramekins to cook the fondant. Butter up the tray using a ladle, and divide the chocolate mixture into the tray.

7. Place the tray or ramekins in the over for about 12-16 minutes. Make sure the fondant looks cooked on top, and not over cooked.

8. When you remove it from the oven, leave it to cool down for a few minutes before digging in.
