Ramadan Iftar Menu: Day 11

Carrot Soup + Beef Fried Rice + Apricot Pudding with Nuts (Muhallabia Amar El Deen)


The Soup:

Carrot Soup Recipe


What you will need:

2 Tbsp of vegan oil

4 carrots (diced)

2 onions (chopped)

1 1/2 Tbsp of flour

2 cups of chicken or meat broth

1/2 cup of cooking heavy cream

1/2 cup of milk

Salt and pepper

2 cloves

Steps:

1. Start by heating the oil in a cooking pan then add in the carrots and onions, stir, then put in the flour and mix for five minutes.

2. Pour in the broth slowly until it covers the mixture fully. Leave for 10 minutes or bring to boil.

3. Turn off the stove and set the broth aside to cool down then pour it in the mixer and blend for 30 seconds. Switch it once more to the stove.

4. Add the cream and milk followed by some salt, pepper and cloves. Keep stirring until the soup starts to thicken. You can add in some water if you want it lighter.

5. Decorate your carrot soup with cream or grated carrots and parsley.


Main Dish:

Beef Fried Rice recipe


What you will need:

500 grams of beef slices

1 1/2 cup of rice

3 cups of meat broth

Salt and pepper

3 Tbsp butter

1 small onion (chopped)

2 colored bell peppers (chopped)

2 Tbsp of chopped parsley

Steps:

1. Marinate the beef in the onions and black pepper for a few minutes.

2. Put the mix in a large frying pan on low heat for 20 minutes.

3. In the mean time, wash the rice thoroughly. Then fry it in the butter for three minutes. Make sure to stir it well.

4. Back to the beef, toss in the colored bell pepper and parsley and mix them on the fire for a couple of minutes.

5. Now it's time to Add the rice to the beef, and blend them perfectly.

6. Pour the broth over the mixture along with some salt. Leave on low heat until the rice is cooked.


Dessert:

Apricot Pudding with Nuts (Muhallabia Amar El Deen) Recipe


What you will need:

1 roll of dried apricot paste (amar el deen)

2 cups of sugar

2 Tbsp of starch

1 tsp of vanilla

1/2 cup of water

1/2 cup of coconut flakes

Mix nuts (almonds, peanuts, pistachios, walnuts, etc...)

Steps:

1. Pour the water into a large pan along with the apricot paste roll. Put it over the stove and wait till it melts completely.

2. Add the sugar and stir until it starts to boil.

3. In a smaller pot, dissolve the starch in half a cup of water then add it to the apricot juice.

4. Keep stirring and you will notice the mixture start to thicken. When that happens add it the vanilla and coconut flakes then turn off the heat.

5. Pour the apricot pudding in dessert serving bowls then sprinkle some nuts on top.
