Ramdan Iftar Menu: Day 17
Seafood Soup with Oats + Crab Cakes + Coconut Snowballs
The Soup:
Seafood Soup with Oats Recipe
What you will need:
1 tsp of lemon squeeze
2 Tbsp of butter
150 grams of unpeeled shrimps
100 grams of mussels
1 medium sized onion (chopped)
1/4 cup of oats
2 garlic cloves (minced)
Salt & pepper
Steps:
1. Peel the shrimps and take the peels, wash them well then put them in a pan with water on the stove. Leave for 15 minutes.
2. In another pan, melt the butter then add the onions and garlic, stir until they turn golden.
3. Add the lemon squeeze, oats, a pinch of salt and pepper.
4. Throw out the shrimp peels, then pour the soup you made over the previous mixture along with the shrimps and mussels.
5. Stir the soup then leave it on medium heat until the ingredients cook and the mussel pieces open up.
P.S. You can add to the soup any other type of seafood you like (crabs, calamari, etc...)
Main Dish:
Crab Cakes Recipe
What you will need: (Ingredients enough for 10 - 12 cakes)
1/4 kilo of crab meat
1 onion (chopped)
1 large carrot (finely chopped)
1 tsp of lemon squeeze
1/2 bundle of parsley (chopped)
2 tsp of mayonnaise
2 Tbsp of flour
2 Tbsp of butter
4 Tbsp of frying oil
Salt & pepper
Bread crumbs
Steps:
1. Melt the butter and fry the onions and carrots until the onions turn golden.
2. In a large bowl, cut up the crab meat then add the fried onions and carrots. Mix them well.
3. Add the lemon squeeze, parsley, mayonnaise, flour, salt and pepper and stir them slowly and carefully until they are fully blended.
4. Take some of the mixture and mold them with your hands into the shape of a thick disk (crab cake). Repeat this step for the rest of the mixture.
5. Dab each crab cake in the bread crumbs so that it sticks from all sides then fry them in the oil on medium heat.
6. Leave the cakes to fry for three minutes on each side before flipping it carefully, make sure that it doesn't fall apart. It should take a golden brown color.
7. Place the crab cakes on a serving plate and garnish with fresh parsley leaves.
Dessert:
Coconut Snowballs Recipe
What you will need:
1 cup of semolina
2 cups of sugar
1 cup of coconut flakes
1 cup of milk
4 Tbsp of cocoa powder
3 cups of water
Steps:
1. In a medium sized pan, put the water then slowly add the semolina while blending well with a whisk.
2. Add in the milk then the cocoa powder while continuing to stir.
3. Put the mixture on medium heat and blend with rapid movements until it thickens and starts to boil.
4. Turn off the heat and set aside for 10 minutes to cool down and turn to a soft dough.
5. Take a portion of the dough and shape it into a small ball, then dab with coconut flakes. Repeat until you finish all the dough and place them onto a tray.
6. Put the tray with your coconut snowballs in the fridge for a few hours before serving.
