Ramadan Iftar Menu: Day 6
Creamy Mushroom Soup + Creamy Chicken Curry + Kunafa Filled with Nutella
The Soup: Creamy Mushroom Soup Recipe
What you will need:
1/2 Cup cream
1/4 Chopped onion
1/2 Tsp salt
2 Tbsps flour
1/8 Tsp pepper
2 Tbsps butter
2 Cups chicken broth
3 Cups sliced mushrooms
Steps:
1. In a large-sized saucepan, cook the onion in butter and stir well until it softens. Pour the mushrooms to the mixture and wait until it gets tender.
2. Combine the chicken broth and flour until the mixture turns to a smooth paste. Add chicken broth and flour to the mushroom and onions and stir thoroughly.
3. Bring the entire mixture to a boil while stirring for a couple of minutes until it completely thickens.
4. Reduce the heat and add the cream to the mixture while stirring, till it thickens and turns to your desired texture.
Main Dish: Creamy Chicken Curry
1 1/2 Cups white rice
1/2 Kilo boneless chicken
2 Tsp curry powder
3/4 Tsp salt
1/4 Tsp pepper
2 Tbsps tomato paste
1 Cup chopped tomatoes
1/2 Cup chopped onion
1 Cup coconut milk
3 Cups tiny spinach
1 Tbsp oil
Steps:
1. Cook the rice well and set aside. Bring the boneless chicken and season it with salt pepper and curry. In a large saucepan, cook the chicken and onions in oil until they turn golden.
2. Pour in the coconut milk along with the tomato paste and leave it all to boil.
3. Reduce the heat and stir for 5 minutes until it thickens. Add spinach and tomato until they get tender.
4. Serve the creamy chicken curry over the rice and enjoy your meal!
Dessert: Kunafa Filled with Nutella Recipe
What you will need:
200 grams butter
1/2 Kilo Kunafa
Nutella Jar
Steps:
1. Bring the kunafa in a bowl and start cutting it with a knife or with your hands into small shredded pieces.
2. Slice the butter into cubes and melt it in a small sized pan, then pour it on the kunafa and mix thoroughly until the kunafa turns moist.
3. Bring two round pans and place equal amounts of kunafa in each one. Make sure to coat the surface of each pan with enough butter to prevent sticking.
4. After you place the kunafa, make sure to press down the raw kunafa to create a flat surface of kunafa especially towards the sides of the pan.
5. Pre-heat the oven and place both pans of kunafa in the oven for 25 minutes or until it turns golden.
6. When the kunafa is well cooked, remove it from the oven and leave it until it cools down.
7. With a flat knife place a fine amount of Nutella on top of the kunafa in only one pan. Make sure to spread the nutella well in order not to create any lumps.
8. Carefully flip one kunafa pan to the nutella-loaded kunafa pan. Leave the kunafa for around 10 minutes so they blend well, place it on a serving pan.
