Desserts are very rare in my usual diet, as a matter of fact, my taste buds are more of a salt and sour fan. Nevertheless, every once in a while I love to raid the kitchen and make my very own banoffee pie recipe come to life. It's very sweet but extremely delicious with banana slices covered in toffee, and cream melting in your mouth. Yummy! Here's how you can make this mouthwatering Banoffee Pie.
What you will need:
3 - 4 Bananas
120 gm Butter
300 gm Whipped cream
1 can Condensed milk (396 gm)
3 packs McVitie's Digestive biscuits
Steps:
1. Start by submerging the can of condensed milk (while still closed) into a pot filled with water and leave it on the fire for two and a half hours. Make sure that the water fully covers the can at all times.
2. In the mean time, put the biscuits in the food processor to crush them for the banoffee pie base.
3. Melt the butter in a saucepan, then add them to the crushed biscuits in a bowl and mix well.
4. Get a baking dish and spread the mixture you made in step 3 on the base and half way up the sides. Try to pat it firmly and evenly. Keep it in the fridge till right before you start working on the condensed milk again.
5. When the time is up for the condensed milk to be removed from the water, pick it up with tongs and leave it on the kitchen counter for a minute or two to cool down. Don't leave it more than that, you want your toffee still soft to be able to spread it properly.
6. Open the can carefully but make sure to have a napkin or kitchen paper ready to block, as it might spray out. The milk should have turned into caramel colored toffee.
7. Pour the toffee all over the biscuit layer. Use a spoon to make sure it's leveled properly. Be sure to do this fast, while the toffee is still liquid-ish, for it will turn sticky as it cools.
8. Slice the bananas and arrange them on top of the toffee.
9. Spread a layer of whipped cream to cover the whole dish.
10. Finally grate some dark chocolate on top and you have yourself a savory banoffee pie.
