Ramadan Iftar Menu: Day 20
Vegetable Soup + Beef Kofta + Chocolate Chip Pancakes
The Soup:
Vegetable Soup Recipe
What you will need:
4 cups of chicken broth
1 medium sized onion (chopped)
2 medium sized potatoes (chopped)
1/2 cup of green beans (chopped)
1/2 cup of carrots (chopped)
1/2 cup of peas
3 zucchinis (chopped)
Salt & pepper
2 Bay leaves
Steps:
1. Fill a medium sized cooking pan with water and bring to boil, then add in the chopped onion and bay leaves.
2. Add in the chopped carrots, peas and green beans and leave until they are almost fully cooked.
3. Now it's time to put in the potato cubes and zucchinis.
4. Pour in the chicken broth along with some salt and black pepper to adjust the taste to your preference.
5. Leave the soup till it boils and now it's ready to be served.
Main Dish:
Beef Kofta Recipe
What you will need:
1/2 kilo of minced beef
1 bundle of parsley (chopped)
Salt & pepper
1 stick of cinnamon
Steps:
1. In a bowl, mix the minced beef, parsley, salt and pepper.
2. Bring a medium sized tray and start shaping the minced beef mixture to fingers and arranging them in the tray. Repeat until you've shaped all the amount.
3. Put the cinnamon stick among the Kofta fingers then turn on the stove on low heat. Make sure to cover the tray.
4. Leave the tray for 10 minutes, you will notice the accumulation of water beneath the kofta. Flip the beef fingers on the other side then cover it once more.
5. Keep the tray on low heat until the kofta is fully cooked, then serve.
