Round three of The Pancake Series continues, this time bringing to you a special kind, peanut butter and banana pancakes. Every now and then I like to change up from the stereotypical pancakes, and so I decided to combine two of my favorite foods into my very own pancake. If you're thinking that this is too much of a combo for a pancake, you must taste first then judge.
What you will need:
2 Eggs
1 Cup Flour
1 Table Spoon Sugar
1 Table Spoon Baking Soda
1 1/2 Cup Milk
1/2 Tea Spoon Vanilla Extract
1/4 Cup of Peanut Butter
2 Bananas
Pinch of Salt
** This will create a batter that will make up to 12 pancakes, be sure to store the unused in the freezer or fridge.
Steps:
1. In a large bowl, crack the eggs and beat them with a mixer until they become fluffy and filled with bubbles.
2. Dice the bananas and mash them up, until they form a moist paste.
3. In a small sauce pan, melt the peanut butter.
4. In a large mixing bowl, combine all the ingredients except the bananas. Mix the batter thoroughly and make sure there are no lumps left.
5. Add the bananas and beat efficiently until batter is a creamy light brown color.
6. Pre-heat a wide pan, and add a few drops of oil/butter to it. Spread it across the entire pan to prevent any sticky situations.
7. Using a ladle, scoop up some of the batter and lay it in the middle of the pan.
8. Reduce the heat, so that the pancakes are cooked from the inside out. Once the edges turn a golden brown, it's time to flip and cook the other side the same.
Voila, you have yourself peanut butter banana pancakes.
