Every now and then I love to spoil myself and make me some pancakes on a Friday morning. The awesome thing about pancakes, is that they can be done in various ways. Therefore, the day has come people where I will begin 'The Pancake Series,' starting with: Rainbow Colored Pancakes.
What you will need:
2 Eggs
1 Cup Flour
1 Table Spoon Sugar
1 Table Spoon Baking Soda
1 1/2 Cup Milk
1 Tea Spoon Vanilla Extract
Pinch of Salt
Food Coloring: Red, blue, yellow and green
** This will create a batter that will make up to 12 pancakes, be sure to store the unused in the freezer or fridge.
Steps:
1. In a large bowl, crack the eggs and beat them with a mixer until they become fluffy and filled with bubbles.
2. In another bowl, mix the rest of the ingredients together.
3. Add the batter you mixed in step 2 onto the eggs in step 1 and beat thoroughly. Make sure you mix very well, until batter is a whitish/yellowish color and is creamy.
4. Divide the batter into different small bowls. That way you can add a color to each one separately.
5. Add four drops of food coloring into each bowl. For example, four drops of red food coloring into one bowl, four drops of blue in the other bowl.
6. After adding the food coloring to the bowl, mix them well until the color of the batter has fully transformed.
7. Pre-heat a wide pan, and add a few drops of oil/butter to it. Spread it across the entire pan to prevent any sticky situations.
8. Pour one of the colored cups of batter into the middle of the pan, and cook until ready to flip. Make sure to reduce heat while cooking so that the pancake is cooked from inside out. Be sure to cook the pancake on each side for at least one minute.
9. Repeat step eight again with the different colors of batter.
10. Stack your pancakes on top of each other and, voila, you have yourself rainbow colored pancakes.
Tip: You can mix the food coloring together to form other colors. For example, add 5 drops of red and 5 drops of yellow to the same batter to make the color orange.
