Banana Frozen Yoghurt Bites

 

 

Ingredients

 

1 large ripe banana

150g yogurt of your choice

Handful of dried banana chips (optional)

 

Steps

 

1- Arrange about twelve silicone muffin cups or cupcake liners on a small baking sheet.

2- After peeling, place the banana on a dish. Using a fork, mash until the majority of the lumps are gone.

3- Pour the yogurt into the bowl containing the crushed banana. Mix thoroughly by whisking together.

4- Spoon yogurt and banana combo into the bottom of each cake box until the yogurt is all used up.

5- If desired, add the banana chips on top. You can use entire ones.

6- Place the cups in the freezer for a few hours, while they are still on the baking tray.

7- Once completely frozen, take out the cases and serve.

8- These are delicious right out of the freezer as a nutritious snack or dessert. You could even mix a couple into a bowl of cereal or oats for a creative breakfast idea.

Peanut Butter Banana Smoothie

 

 

Ingredients

 

2 bananas

1 cup ice

2 cups milk (can use almond milk and can also substitute ½ cup of Greek yogurt for some of the milk)

½ cup peanut butter

 

Steps

 

1- Using a blender, blend all the ingredients until smooth, blending for 1-2 minutes. Top with whipped cream, if desired. 

2- You can replace ½ to 1 cup of milk with ½ to 1 cup of Greek yogurt to add extra protein to your new banana peanut butter Greek yogurt mixture.

Apple Slice Cookies

 

 

Ingredients

 

One Apple, Red Delicious

One to two tablespoons of unsweetened coconut flakes and 1/4 cup peanut butter

A teaspoon to two of finely chopped walnut pieces

A teaspoon or two little chocolate chips

Optional: Lemon Juice

 

Steps

 

1- Cut off the apple's core (or, if you prefer, remove the cores from each slice after slicing).

2- Using a large knife, cut the apple into 1/4-inch slices.

Optional: Toss the apple slices with a spritz of lemon juice in a zip-lock bag if you're concerned about them browning.

3- Arrange every apple slice on a paper towel sheet and use another paper towel to gently pat the tops dry.

4- On each apple slice, spread a coating of peanut butter.

5- After that, sprinkle a good amount of coconut flakes, walnuts, and small chocolate chips on top.

Chocolate Covered Frozen Bananas

 

 

Ingredients

 

2 ripe firm bananas

340 gm dark chocolate chips or semi-sweet bar chocolate, cut into small pieces

4 tbsp refined coconut oil

 

Steps

 

1- To avoid sticking, cut the banana into slices and arrange them on a tray covered with parchment paper. Once the bananas are frozen firm, place the tray in the freezer. Approximately two hours.

2- In the meantime, put the coconut oil and chocolate chips in a measuring cup or bowl that is suitable to use in the microwave. After 60 seconds in the microwave, mix. Stir the sauce continuously until the chocolate has melted and turned shiny. Let the chocolate cool on its own.

3- Once the bananas are frozen, coat each one from top to bottom with the cooled chocolate.

4- Before placing the slice on a parchment or waxed paper-lined tray, let any extra chocolate drip off. Return the covered slices to the freezer immediately afterwards to solidify.

5- After the bits have solidified, you may move them to a zip-lock freezer bag or freezer-safe storage container.

Chocolate Tiffin Recipe

 

 

Ingredients

 

200 g salted butter

100 g Tate And Lyle Caster Sugar 

200 g plain chocolate

100 g raisins 

300 g digestive biscuits 

For the topping

200 g milk chocolate, roughly broken up 

¼ tsp vegetable oil

 

Steps

 

1- In a medium pot, place the butter and slowly heat it until it melts. After adding the chocolate and stirring over very low heat until it melts and the liquid becomes smooth, stir in the sugar.

2- After adding the raisins to the pan, add the biscuits to the pan three to four at a time, breaking them into little chunks with your fingers. Mix thoroughly until the chocolate coats every biscuit.

3- Press the mixture into a 20cm square tray that has been lined with baking paper, making sure it's smooth and level. Allow it to sit for a few hours in the refrigerator (or freeze for 20 minutes).

4- Melt the milk chocolate and oil in a bowl over a pan of gently simmering water, or microwave in 30-second increments, to form the topping. Spread the mixture over the tiffin and allow it to set again before slicing it into squares.

Gluten-Free Pancakes

 

 

Ingredients

 

1 cup gluten-free all-purpose flour

1 tablespoon baking powder

½ teaspoon salt

2 ½ tablespoon butter, melted and cooled

1 egg

1 teaspoon vanilla

1 tablespoon sugar

1 cup almond milk, add more or less to the desired consistency

 

Steps

 

1- Turn the heat up to medium-high on the skillet or pan and add some butter.

2- In a large bowl, whisk together all dry ingredients. Mix all of the wet ingredients together in a small bowl. Add the wet ingredients to the dry and well mix.

3- If you prefer a thinner pancake, add additional milk. To achieve the desired consistency, you will need to make adjustments.

4- Cook until cooked through, a few minutes on each side. Serve hot, topped with heaps of syrup and butter.
