Ramadan Iftar Menu: Day 5
Fish and Vegetables Soup + Roasted Salmon and Potatoes + Atayef with Nutella
The Soup:
Fish and Vegetables Soup Recipe
What you'll need:
4 slices of fish fillet (cut each slice in half)
2 Tbsp flour
1 onion (cut into 4 wedges)
2 bay leaves
1/4 Tsp of mastic
3 Tbsp of olive oil
2 Tbsp of tomato paste
2 garlic cloves (minced)
1 stalk of celery (chopped)
2 Tbsp of cilantro
2 tomatoes (peeled and minced)
1 carrot (diced)
1 potato (diced)
Salt and pepper
Steps:
1. First you need to cook the fish. To do that, boil some water in a pot, add the onions, bay leaves, mastic and a pinch of salt and pepper.
2. Once the water heats up, toss in the fish fillet and leave for 15 minutes. Remove the fish from the water and set aside.
3. Bring another pot, heat up the olive oil, put in the garlic and celery and stir for a few minutes.
4. Add in the flour and keep stirring till it starts turning yellowish.
5. Now is the time to put in the tomatoes, carrots, potatoes and tomato paste. Cook for about 10 minutes.
6. Carefully, pour in the soup you made in step 2. Make sure it covers the mixture fully.
7. Leave for 10 minutes, then cut the fish fillet to small pieces and toss them in the soup.
8. Once the potatoes are cooked and soft, that will be your cue to turn off the heat.
9. Serve your fish and vegetables soup with a few drops of lemon juice and some fresh cilantro or parsley as garnish.
Main Dish:
Roasted Salmon and Potatoes Recipe
What you'll need:
4 boneless salmon slices
2 medium sized potatoes (sliced)
1 onion (cut as rings)
1 tomato (diced)
Lemon slices
1 green bell pepper (sliced)
3 Tbsp of olive oil
2 Tbsp of lemon juice
2 Tsp of oregano
2 garlic cloves (minced)
Salt and pepper
Steps:
1. Clean the salmon thoroughly with vinegar and flour.
2. Make a mixture of salt, pepper, lemon drops and garlic to marinate the salmon in. Leave for an hour.
3. Get a tagine or ceramic pan and cover the bottom with foil sheets.
4. Spread the potato slices, onion rings, green pepper, tomato and oregano over the foil. Add some olive oil too along with some salt and pepper and mix well. (You can add some chili powder if you prefer)
5. Lay the salmon slices over the bed of ingredients and cover it with some lemon slices and the rest of the olive oil.
6. Pre-heat the oven for 10 minutes, then put the pan inside till the salmon is cooked and its surface takes a reddish brown color.
7. Your roasted salmon and potatoes could be served with brown rice or some french fries.
